Aiming to preserve the biodiversity of leavening agents and the knowledge on how to use sourdough in baking, Puratos created the one and only Sourdough Library in Belgium, a non-profit initiative dedicated to the conservation and promotion of sourdoughs from all over the world. The library now has over 100 sourdoughs. We also partner with universities to analyze the composition of microorganisms in the lab. So far, more than 700 strains of wild yeast and 1,500 lactic acid bacteria have been recorded!
Not everyone can travel to Belgium and visit the Sourdough Library in person. Fortunately, with technology, we are able to bring it to you! Check out the Virtual Sourdough Library and learn about the culture and tradition behind each sourdough. You can also discover more about sourdough.
