Hikmet Boyacioglu, Applications Development Specialist, KPM Analytics, will discuss the importance of damaged starch from the baker’s point of view and current damaged starch determination methods, and answer your questions.
Award-winning pastry chef Leanne Bentley, instructor at Vancouver Community College, will take you on a journey with trending travel cakes at the demo stage.
Nav (Navkinderjit) Sidhu, who teaches at VCC’s baking and pastry program, is known for her nut-free creations sold through Sugar and Spice Bakeshop. She’ll focus on the galette on the demo stage.
