In his technical talk, Why Damaged Starch Is a Must Parameter in Flour Specifications for Bakers, well-respected cereals expert Dr. M. Hikmet Boyacioglu, Applications Development Specialist, KPM Analytics, will discuss the importance of damaged starch from the baker’s point of view and current damaged starch determination methods, and answer your questions.

Award-winning pastry chef Leanne Bentley, instructor at Vancouver Community College, will take you on a journey with trending travel cakes at the demo stage.

Nav (Navkinderjit) Sidhu, who teaches at VCC’s baking and pastry program, is known for her nut-free creations sold through Sugar and Spice Bakeshop. She’ll focus on the galette on the demo stage.

Suzanne Fielden, co-founder of Rocky Mountain Flatbread, will share her story of success with this 19-year-old community-first brand in our panel Women in Pizza: Canada Edition.

Our very special guest, Bruno Feldeisen, world-renowned chef and judge on CBC's Great Canadian Baking Show, will help judge our Mother’s Day Celebration Student Cake-Decorating Competition and sign copies of his book at the BAC booth.

An engaging keynote talk by Mark Dyck, creator and host of Rise Up! The Baker Podcast, and Bakers4Bakers.org in which you will learn techniques that will help you tell better stories about your bakery. Mark will also host a lively panel of up-and-coming bakers!
