As humans become open – slowly – to the idea of a little cricket “crunch” now and then, it’s difficult to know if livestock could follow at the same pace. Western Europe’s edible insect industry is nascent, human consumption only recently approved. Between 20 and 25 per cent of citizens indicate a willing appetite. While the benefits of insect feed are recognized for livestock, the next frontier is regulatory – so while it might be a matter of "when, not if," the industry's response to the idea of insect feed remains a question mark.

In 2017, Harley and Brooklyn Siemens reinvented their operation, starting with a brand-new free-run facility, which can hold 32,000 birds, at their family farm in Rosenort. They also built a pullet training facility with a capacity of 27,000. In 2020, they bought into a company called Manova, which owns a 50,000-bird enriched housing layer barn in Blumenort, Man. and a 18,000-bird conventional housing layer barn in Niverville, Man. Between all sites, Siemens Farms produces about 90,000 eggs per day. So how do they feed their flock?
