At a typical Quebec bakery, or boulangerie, the aroma of freshly baked bread and pastries permeates the air, evoking a sense of comfort and tradition.
The province’s history is evident in the prevalence of traditional French baking techniques with an emphasis on time-honoured methods and high-quality regional ingredients. Today, bakers in Quebec face the challenge of honouring these deep-rooted traditions while meeting evolving consumer demands. But, the provincial baking scene shows that authenticity doesn’t mean stagnation – there’s room for new classics.
“Quebec has a very rich heritage with French-inspired culture and tradition and the style of baking they do is really special,” says Michael Simone, president of Puratos Canada, the Canadian arm of Belgium-based ingredients supplier Puratos. “They have a great appreciation for local, natural ingredients that they pride themselves on sourcing locally. It’s a very interesting market.”
Recognizing this, Puratos Canada recently opened an Innovation Centre in Montreal, designed to help bakers of all sizes across the province tap into the company’s expertise in bakery, patisserie and chocolate making.
