Food-grade soybeans make up 25 per cent of the Canadian crop. For each type of food product, processors look for particular quality characteristics in the soybeans they buy. Kangfu Yu, soybean breeder at AAFC Harrow, is developing diverse varieties to meet those special quality requirements while ensuring the varieties also have the traits Ontario growers need.
